From the beginning, Dana Sinkler and Alex Dzieduszycki were incredible chefs with the sort of entrepreneurial spirit that keeps one's ingenuity and imagination cooking. The two New York chefs ventured away from their jobs at four-star, Manhattan restaurants and began Dana Alexander, Inc., a modest catering business born in the small kitchen of Dana's apartment on the east side that would soon grow to cater some of the most elite parties in the Big Apple.
The two entrepreneurs were on the road to success. However, they aimed to do more. They strived to achieve better. To stand apart from the other premium caterers they needed a distinguishing edge, some aspect that would push them over the top a signature dish! That was it. Problem solved, right? Well, not exactly. Dana and Alex needed to roll up their sleeves over a hot stove and create the masterpiece which would spread their name amongst the city's upper echelon.
Main dishes change with each event, therefore, a signature entree would not suffice for every occasion. Hors d'oeuvres held a little more promise for a signature dish, but the two entrepreneurs did not like the idea of tucking away their prized provender out of sight when the entrees were served. Their focus turned to the bar where guests characteristically made their first visit to order a drink and nibble on appetizers. Thus, Dana and Alex decided to create an appetizer that would be a flavorful snack on the bar, a beautiful accompaniment with any meal, or a welcomed addition to the fanciful plate of hors d'oeuvres.
Vegetables, dips, crackers, chips, pretzels and peanuts came to mind, but none alone encompassed the stature and quality characteristic of a four-star New York shindig. It was time to get exotic, time to get their entrepreneurial ambition bubbling with ideas, time to dig deep and reach the roots of their creativity! Dig deep?? Roots?? Did somebody say roots?
Chips were the answer, not potato chips, but root and vegetable chips: taro, ruby taro, sweet potato, batata, parsnip, yuca, lotus root, blue potato, celeriac root and Jerusalem artichokes. Dana and Alex began scouring the city for the most fascinating roots and vegetables, some grown locally and some imported internationally. The results were even more exciting than the concept. The flavor, texture and color of the chips made the most exquisite presentation at each and every Dana Alexander, Inc. catered party. They were a hit!
