  
And as a family owned business, part of our legacy is that we have a collection of such recipes: all original. It is these family secrets that have been winning us our unique reputation and quite a few awards over the last 20 years, culminating in the Biscuit World Cup 2003.
Surrounded by some of the loveliest countryside in Scotland, our modern, purpose-built, specialist bakery has CMI Accreditation Certificate in place and procedures in place to ensure the highest quality and hygiene. Nothing less would do.
At Border Biscuits we are passionate about making great tasting biscuits, and we have a clear and simple philosophy which is quite simply to make extremely delicious biscuits. We start with the selection of ingredients which have to be the very best and, like every other aspect of our business, we won't compromise. Fresh butter, demerara sugar, glace cherries, butterscotch, fresh almonds and rich chocolate, are some of those ingredients, and no flavours come out of a bottle (except vanilla and it is 100% natural) or are derived from chemical or artificial means. "Good biscuits deserve a good recipe" and we at Border have plenty of these some going back generations and others being fairly new creations.
"So, you might say that it's simple use the 'best quality' ingredients in a 'good recipe' to produce great biscuits!!!!
Well not quite:-
Ingredients are mixed in batches in traditional mixers that cream up the mix and then gently develop into dough. There are much faster modern mixers which do a quicker job, but our type of mixers are the same as used at the turn of the century.
The dough is then formed into various types of biscuit shapes by cutting, moulding or piping. We use traditional baking trays in our process which are placed into batch rack ovens which is one of the most crucial areas in the process. Our biscuits are baked slowly, twice as long as those that are mass produced in traveling ovens………. but then……… 'waiting for the best things in life requires patience'.
The final and the most important ingredient is our skilled local people, many of whom have worked for us for twenty years and include generations of families. Following in the Scottish tradition of unhurried home baking, they create our delicious unmistakable Border Biscuits.
